Cranberry Nut Bread

Yum yum yum! This bread is delicious! It cannot pass as officially healthy, but since it has a lot of cranberries in it, you are still getting those nutrients. :)



CRANBERRY NUT BREAD (I got it off of the bag of Ocean Spray Cranberries)
2 cup flour
1 cup sugar ( I have made this with regular sugar and with Splenda... both tasted great)
1 1/2 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup orange juice
2 teaspoons grated orange peel (I didn't put this in, but I am sure it would give you more of an orange punch!)
1 egg, well beaten
1 1/2 cup fresh or frozen cranberries, chopped (This is the best thing about this recipe. I used frozen cranberries, and you don't even have to let them thaw before putting them in the mix. You can just throw them in! It is great for people like me who always forget to pull things out of the freezer. I don't always plan very well.)
1/2 cup chopped nuts.

Preheat oven to 350 degrees. Grease a 9x5 inch loaf pan. Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl. Stir in orange juice, oil, orange peel, and egg. Mix until well blended. Stir in cranberries & nuts. Spread evenly in loaf pan. Bake for 55 minutes or until a tooth pick comes out clean. Cool on rack for 15 minutes. Remove from pan; cool completely. Makes 1 loaf.
